raw chocolate covered lavender dream bites


OKAY these....they practically melt in your mouth. one of my favorite go-to treats for great energy and 100% satisfaction (without eating the whole batch). I love adding lavender to recipes, it gets sorta addicting. lavender pairs especially well with chocolate and nuts so.... you could say these bites are a match made in heaven. 



in the family i work for, there are 2 young boys, matthew (age 10) and truman (age 8). like any little boy, they live on junk and often are grazing all day on oreos, fruit juice, cold cereal, etc... BUT i had these laying out and they asked if they could try them. then the next day they were nearly gone. so i'm going to say these guys 100% passed the kid test. oh, they are fool-proof and easy to make too-nothing intimidating about it! so if you don't have a food processor, buy one and get on these babies >>



ingredients:
1/2 c raw walnuts
1/2 c raw cashews
1/4 c coconut shredded & unsweetened
2 T raw hulled hemp seeds
12 soft dates, pitted
1 T pure maple syrup (grade b)
1/4 t high quality sea salt
1/4 t cinnamon
1/8 t ginger powder
2 t pure vanilla extract
1 t dried lavender

-add walnuts, cashews, coconut & hemp seeds to a food processor & process until fine. add the rest of the ingredients and process until it all comes together to a sticky ball. roll into individual 1" balls & set in freezer.

-in a double broiler gently melt 1 c chopped raw cacao paste + 1 T coconut oil + 1 T raw honey (alternatively melt high quality dark chocolate bar or chips & whisk with 1 T coconut oil). mix well. 


-using 2 forks, roll each ball in the chocolate until coated & set on a parchment lined platter. freeze until firm, then enjoy! (best kept in fridge, or freezer-and they will last a long time so double the batch!)
