blueberry peach cobbler // vegan + grain free




this absolute favorite of mine is egg, grain and gluten free-for those who can't/don't consume those products. it is NOT free of love, tastiness, happiness or warm, summery flavor (: the only sweetener i used in this recipe is lakanto-which is a calorie free, zero GI sweetener that i love to use in moderation (you can read more about it here). so that leaves is very low in sugar and high in goodness! choose this for breakfast friends.





ps. best healthy crumble topping around and arguably the easiest treat to whip up! it was gobbled up quick at our house by 8 littles! hurry and make it before those juicy local peaches are gone.





ingredients:
4 local ripe peaches, peeled and sliced
1/2 cup blueberries 
1/3 cup chopped activated pecans
1/3 cup chopped activated almonds
1/3 cup coconut flakes
1/4 cup almond flour
1/4 cup lakanto sugar (or coconut sugar works too)
1 tablespoon coconut flour
1 teaspoon cinnamon
1/2 t nutmeg
pinch of pink salt
1/4 cup melted coconut oil
-preheat your oven to 350F. in a medium sized mixing bowl, whisk together the pecans, slivered almonds, coconut flakes, almond flour, lakanto sugar, coconut flour, cinnamon, nutmeg and salt. drizzle the melted coconut oil on top and mix until everything is combined, slightly crumbly still, but sticking together. 
-lay sliced peaches and blueberries evenly in the bottom of a glass baking dish and evenly distribute crumble on top. cover with tinfoil and place in the oven for 30 minutes. remove foil and bake another 15 minutes until golden on top. remove from oven and cool. serve with some killer homemade healthy ice cream for dessert or a scoop of plain organic yogurt of choice for breakfast!
