homemade vegan mac n 'cheese' // so many secret veggies!


hold the cheese please! okay, I'm not in any way against cheese-but I do think it's important to find a really good quality cheese when I choose to eat it-this is hard to do! raw & organic? it's rare. so a lot of the time I go for the tasty cheese alternatives-like I did here...i mean just look at that "cheeeezy" goodness!



another easy recipe friends. and your family won't even know it's not loaded with cheese. but just for the littles-you can throw some shredded organic cheese on top at the end to satisfy that acquired taste they're expecting. i personally don't think it needs it!


this recipe is packed with nutrients. nutritional yeast is brimming with B vitamins, there are a plethora of vitamins and fiber in the vegetables, and the bone broth is rich in the amino acids proline and glycine, which are vital for healthy connective tissue (ligaments, joints, around organs, etc). then you have loads of fiber and protein from the beautiful bean noodles...all the more reason to try it out this week!

ingredients:

1 T organic ghee
1 large carrot, cut in chunks
1 c cauliflower florets
1 zucchini, sliced
1/3 c nutritional yeast
1/2 c organic chicken bone broth
pinch of sea salt

3 c cooked bean pasta (I love this brand)

-heat ghee in a large skillet and add veggies + enough water to cover. cover pan with a lid and steam veggies until very soft. then, drain veggies and place in a blender with NY, sea salt & broth. blend until smooth. pour over pasta in a large bowl and stir until everything is well coated. serve with a sprinkle of organic cheese (or cheese alternative) of choice (optional-I omit) and serve warm!




ps. don't we love the hidden veggies in here!?
