perfect side dish // indian spiced roasted beets
I LOVE BEETS. don't you? you should. they are so nutrient dense, grounding, pretty, and mm mm good.
this recipe is a perfect fall appetizer dish. warming, little bit of spice, lot a bit of love. even the non-beet lovers loved this at our place.
ingredients:
2 t cumin
2 t coriander
1 t turmeric
s + p to taste
12 local beets, greens removed (save these for green smoothies!), scrubbed & ends cut off
1/4 c melted coconut oil
-preheat oven to 350F. mix all spices & s + p together in a bowl. in a shallow baking dish, place the beets and drizzle evenly with the oil. rub with spice mixture to coat beets & loosely cover pan with foil. place in oven, roast beets until easily pierced with a knife and skins are slightly wrinkled, about 1 hour 15 min, flipping half way through. remove from oven when soft & let them cool to touch. cut into wedges, sprinkle with s + p if needed & garnish with cilantro. serve warm!
