hands down the best homemade salsa



take my word for it, this salsa is DRINKABLE. no, really. i drink it. or slurp it by the spoonful i guess would be more accurate. but my favorite way to enjoy it is with a homemade raw cracker or chip like my tasty zucchini-seed crackers



the salsa itself takes only minutes to make-that is the magic of a food processor my friends! it's perfect on tacos, salads, chips, eggs, toast, anything! and who doesn't like a good, fresh homemade salsa?! OH, and the local, fresh heirloom tomatoes are a must-their flavor right now is insanely sweet and fresh!




ingredients:
1 bunch parsley, washed, hard stems removed
2 bunches cilantro, washed, hard stems removed
1 bunch green onion, washed, ends cut off
2 small white onion, peeled & chopped
10 large heirloom tomatoes, washed & de-stemmed 
7 cloves garlic, peeled
s + p to taste
1/2 c acv (bragg apple cider vinegar)
1/3 c evoo (extra virgin olive oil)
juice of 6 limes


-add everything to a large food processor (may need to do this in batches), pulse until you reach the desired texture you'd like, i like mine pretty smooth. add to a large bowl or container and taste for salt/lemon/lime juice. add any if needed, stir and eat!

*note: buying local &/or organic is better for your body, the environment and will make this salsa taste SO much better!
