tahini buns // grain free, nut free, paleo burger or sandwich buns

these are nearly fail-proof. they take 15 minutes from start to finish and are SERIOUSLY good. a perfect alternative for those who can't have gluten, grains &/or dairy. plus they hold up and aren't flaky/dry/crumbly. rad.

a few ways i have enjoyed them: toasted as a side to soup, with ghee and homemade jam, as pancakes stacked with fresh fruit, cacao chunks and drizzled with raw honey, as buns to my favorite sammich complete with kraut, butt-load of avocado, sprouts, tamari almonds, red onions, cashew cheese spread and homemade hummus. yuhmmm. options are endless...obviously.

to make:

5 T raw organic tahini paste (I used regular white for one batch, & black for the second. pretty!)
1 organic egg
1 t lemon juice
1/2 t baking soda
pinch of sea salt
optional: 1 T raw honey or stevia to taste

-whisk all ingredients until smooth & well combined.

-preheat oven to 350F & line a baking tray with parchment paper. spoon batter onto sheet to form 4 4" patties. sprinkle with sesame seeds & bake for 10-15 minutes until golden.

note: adding the sweetener makes them slightly sweet-if you are using them for more of a toast and jam dealio. if using for a burger, or sandwich, the sweetener isn't really necessary.

pre-baking they looked like this

then fresh out of the oven, like this!!

each slice has 4g protein & lots of healthy fats. yum!
