raw vegan white & dark chocolate raspberry pie



rich, creamy and delicious. simple to make and lovely to eat! here is yet another healthy treat for you all to enjoy. this one is for all my chocolate lovers (woot)!



also friends, i can't stress enough the importance of buying the highest quality ingredients possible. if you can afford it, buy the best, if not, do what you can! these desserts are VERY healthy and full of great nutrients for our mind, body and spirit, when enjoyed in moderation. << that is key! they aren't low calorie or "sugar free"-they are REAL and WHOLE and they make me happy. so if they do the same to you, enjoy a slice every now & then. and add in a little extra love while you are making it (; loving energy goes a long way.




serves 10-15 friends

crust:
1 c raw activated almonds
2 T coconut oil
1/4 c raw cacao powder
1/4 t high quality sea salt

-add almonds to a food processor & pulse until fine crumbs. add coconut oil, cacao & sea salt, pulse until combined. press evenly into the bottom of a lined springform pan & set in freezer.

white chocolate/raspberry layer:
2 c raw cashews, soaked overnight
1/3 c raw honey
1/2 c melted raw cacao butter
1/3 c melted coconut oil
seeds from 1 vanilla bean

-blend all ingredients until smooth & creamy. pour half the mixture over the crust & then add an even layer of fresh organic raspberries (about 2 c). pour remaining white chocolate over and set in freezer until firm.

cacao ganache:
1/2 c raw cacao powder
1/2 c raw honey
1/4 c coconut oil

-blend until smooth & runny. smooth over white chocolate layer & set in freezer to firm.

-top with more raspberries, slice & serve!
