savory sweet potato granola + a breakfast salad


granola is my #1 go to. always. like I can't have too much of it in the house or else I'd never eat anything else. sound familiar? cool. I'm not alone! 



this granola is so fun and diverse. although it'd still be delicious with plain almond milk in a bowl, the slight sweetness from the sweet potato & nutty taste from the roasted black sesame seeds helps it pair so lovely with savory dishes like your favorite soups (ohhh how lovely it'd be in soup!), pasta, as a meat topper, or salad, like this one! 




use it in place of bread crumbs or croutons for a delicious, healthy, gluten free crunch! 


savory sweet potato granola:

meat from 3 medium soft baked sweet potatoes (skin removed)
1/3 c organic coconut oil
4 big scoops of kal stevia (or your favorite brand to taste)
1 t each cinnamon, ginger & turmeric
1/2 t each nutmeg & sea salt

-add everything to a blender and blend until smooth. 

-in a large bowl whisk:

3 c gf organic sprouted rolled oats
1/2 c each sunflower seeds, pumpkin seeds & black sesame seeds
1 c shredded coconut 

-add sweet potato mixture and mix until everything is well coated. 

-spread out evenly on parchment lined baking sheets and bake @ 325F for 45 - 60 min, stirring up every 10 minutes until done to your liking. cool completely & store in an airtight container. 

for the salad I added fresh local greens, kraut, 2 fried organic eggies, avocado, and a butt load of granola. dressed it all up with a bit of evoo + acv.... mm.
