summer pasta salad // local basil, arugula, heirloom cherry tomatoes & peaches, toasted pine nuts, organic goat mozzarella



delicious and easy summer lunch that the whole family can enjoy!




gluten free, grain free (if you use the bean pasta), and tons of flavor!




i especially love the freshness of this dish. you can get almost all of the ingredients fresh, local, and in season right now! check your local fruit stand or farmers market and support the hard working farmers in your community. 



1 clove garlic, minced

1 lb local heirloom cherry tomatoes, sliced in half
3 T smashes capers
4 springs fresh basil, thinly sliced

-add all ingredients to a large bowl and smash together, using your hands until juices flow (stop it, dirty minds). add in 2 T evoo & s + p to taste.

-cook 7 oz bean pasta (i like this kind! or your fav noodles) & add to "sauce" bowl, hot, along with 2 large handfuls of arugula, 1 handful toasted pine nuts, 2 thinly sliced local ripe peaches & 7 oz organic (raw if possible) goats mozzarella torn into small pieces. mix together. transfer to bowls & drizzle with balsamic vinegar, add more fresh basil, eat!
