baked fig galette // gf




it's easy, pretty, and delicious! go make this one before fig season ends!! promise you won't regret it.




ingredients:
4 T ghee, separated into teaspoon sized portions & set in the freezer for 15 minutes
2/3 c sprouted buckwheat or oat flour
1/2 c sprouted almond flour
2 t coconut palm sugar
1/2 t high quality sea salt

-preheat oven to 350F & combine all but butter in a food processor. add frozen butter & pulse until gravel texture. then add:

1 large ice cube
2 T plain organic yogurt (I used sheep yogurt)

-pulse to combine until it sticks together. transfer dough to a floured piece of parchment paper & roll into a round shape about 1/4" thick. slice 8-10 figs and lay out onto center of dough, then gently fold up edges to create a crust.

-whisk one organic cage free egg well and use a pastry brush to brush a thin layer of egg over exposed crust. transfer parchment to a baking sheet & bake for 25 minutes until golden brown. remove from the oven and drizzle with raw honey. cool, slice & eat! 


-to die for plain... but would also be yummy served up with fresh yogurt, coconut whipped cream or healthy vanilla ice cream!
