my favorite: lavender hibiscus granola with goji berries and cacao chunks + wyoming ranch



first of all...^cacao paste heaven^




if i had to choose my favorite granola on the planet, this would be it. why? 1. it contains chocolate. 2. it's healthy. 3. there are flowers in it. 4. it is crunchy. 5. it is satisfying. 6. it makes my house smell like heaven while its baking and for hours after...should i keep going? i think you get it. it is so lovely and can be thrown together + baked in minutes. 




if you are a granola lover (which i am just going to assume you all are), you must try this STAT. 

fun fact: 


i lived off of celery, coconut butter, fresh fruit and this granola for 3 days while at our ranch in wyoming during the galland family reunion, where everyone else was eating nothing but spaghetti and oreos...ha! i was prepared and ate healthy the whole time. when i pack easy foods like this that i love, the piles of junk food on the counter really aren't appealing at all!

(sorta praying our girls get devs model-esque legs pictured above^^) here is a little love from the trip, filled with hammock chillin', razor riding, pond dipping, long forest walks, pretty mountains, a million kids, a half a million bug bites and a whole lot of love.

i get foot rubs anywhere and everywhere-even in the air. just like, the teeniest bonus to being married to the best man on earth.


matthew and truman played hard and then crashed hard on the plane ride home. coolest kids.

ingredients:

1 c chopped activated walnuts
1 c coconut flakes
2 c activated buckwheat groats (soaked overnight then dehydrated at 115F=the best crispy coco puff texture!)
1/2 c raw hemp seeds
1/2 c activated sunflower seeds
1/4 c chia seeds
2 T dried lavender
3 T dried hibiscus
2 T coconut sugar
1/4 t high quality sea salt


*buy organic everything guys, it's better for life.
-mix all ingredients together in a large bowl. line a baking sheet with parchment paper and preheat oven to 350F. then mix in:

1/2 c raw local honey or brown rice syrup
1/4 c melted coconut oil

-mix well and spread evenly onto parchment. bake for 12 minutes, stir, then bake again for 12-15 minutes until golden. (alternatively you can dehydrate to keep it raw, just set your dehydrator at 115F & check every couple hours for doneness). cool completely, then mix in 1/4 c goji berries & 1/4-1/2 c chopped cacao paste (or a high quality, naturally sweetened chocolate chip).

-enjoy with your favorite yogurt or homemade nut mylk, topped with fresh berries + bananas. devour.

-note: if there is any ingredient you do not have, this recipe is very flexible. omit chia seeds & add more sunflower seeds, or make it nut free and add more coconut or buckwheat. add poppy seeds or almonds, pecans, sprouted rolled oats, etc...use what you have & get creative!
