perfect lemon + fig cheesecake // creamy cinnamon sugar glaze




guys, the fresh figs right now are KILLING me. they are huge and bright and juicy and sweet as can be! I love fig season.



this cheesecake/tart treat is beyond love and a simple starter dessert for those new to raw treats. everyone is sure to enjoy it!




crust:
1 c activated raw pecans
1 c organic dried figs (any kind. be sure to remove hard stems)
pinch of high quality sea salt

-process pecans in your food processor until it becomes a fine meal, then add figs & sea salt & process until dough-like. press evenly into the bottom of a springform or tart pan with a removable bottom. set in freezer.

filling:
2 c raw cashews soaked & rinsed
juice of 2 large lemons
1 c packed fresh, juicy figs (stems removed)
1/4 c liquid sweetener of choice (may need more/less depending on how sweet & ripe your figs are)
1/4 c cold pressed coconut oil

-blend all ingredients in a high speed blender until creamy & smooth. I run it through several cycles, scraping down the blender in between to insure the smoothest texture! smooth over crust and set in freezer for 2+ hours until firm.

-top with sliced figs and a drizzle of this love sauce:

1 c almonds, soaked overnight & drained
1/4 c coconut sugar
2 T Ceylon cinnamon
1/2 t high quality sea salt

-blend everything until smooth (a blendtec twister jar is best for this!). drizzle as much as desired & save the rest to eat on bananas or toast! yum!
