sweet + smoky caramelized cauliflower


this has been my favorite way to enjoy cauliflower this season. which, there are SO many great ways. cauliflower has become very versatile these days! from pizza crusts, to tater tots, to mashed "fauxtatoes"... it's an easy veggie to hide or disguise in "old favorites". 



although, most of the time i love to munch on it raw-the way nature intended, this is sure to be one of those recipes your kiddos (and husband) will love. 
smoked paprika gives this dish the lovely and distinct smoky flavor, while a touch of raw local honey sweetens and caramelizes it to perfection!

ingredients:
2 T ghee
2 T coconut oil
1 large head of cauliflower, cored & chopped in to 1-inch florets
1 medium shallot, peeled and diced
1/2 t smoked paprika
1/4 t red pepper flakes
2 T raw local honey
1 fresh lemon, halved
high quality s + p to taste

-in a large frying pan, heat ghee & 1 T coconut oil and add in cauliflower florets. lay out evenly on bottom of skillet and let them brown for 3-4 minutes on med-high heat. stir, and repeat on all sides until cauliflower is browned to your liking. 

-turn heat to med-low & add in remaining 1 T coconut oil, shallot, paprika, red pepper flakes, & s + p to taste. cook, stirring for 1-2 minutes longer. add in honey and stir to combine. transfer to a serving dish and squeeze lemon over top-enjoy while hot!
