raw + vegan + grain-free banana cinnamon crepes. berry ice cream. fresh mango + mint. flaked sea salt


this recipe is 100% raw, meaning nutrient dense, light & perfect for summer. it passed the test with the kids (ages 8-16), they devoured them. it's a simple and inexpensive recipe that anyone will enjoy!
a quick note about organic: i won't go into all the details of why i chose organic, at least not right now, but i do believe that all around it is better; for the planet and for our bodies. local is best, get it when you can. living here in california really gives me so many amazing options! i am loving it!


the crepes can be easily dehydrated in your oven on its lowest setting, maybe with the oven door cracked a bit so they don't get too warm. although i recommend a dehydrator, it is one of my favorite must-have appliances (along with my killer 16c kitchen aid food processor and blendtec blender. i use these 3 daily!). you can find decent ones that aren't too expensive and the list of things you can do with them is endless! matthew (10) and truman (8) have been so fascinated with my dehydrator ever since i brought it and are anxious to try anything that comes out of it. i often see them sneaking some of my dried fruit instead of oreos from the pantry! small steps that make me happy. 

         

serves 4-6

crepes:

4 bananas
1 t cinnamon
1/4 c coconut milk

-blend all ingredients until smooth. pour 1/4 c onto a parchment lined dehydrator tray & spread out very thinly & evenly. repeat until all the batter is used and dehydrate at 115F (or lowest temp on your oven if you do not have a dehydrator) for 3-4 hours or until it does not stick to your finger when you touch it. do not over dehydrate or they won't be flexible. let cool and gently peel off parchment.

ice cream:

3 frozen bananas
1/4 c frozen berries

-add to a blender or food processor and blend until smooth.

garnish:

fresh berries
fresh, juicy mango
fresh mint leaves
sea salt flakes

-i also added a spread of almond butter and a few chopped dates inside which gave them extra umph! served up with some coconut whipped cream would also taste amazing. you know how to assemble... enjoy!

*note* if you are ever wondering about an ingredient, or what you could substitute in its place, feel free to ask! at times i may be using certain ingredients that you haven't heard of, don't recognize or don't have on hand. there are so many different options to sub certain ingredients you don't have/are allergic to/don't eat. for example, if you do well with dairy, in this recipe you could sub the coconut milk for (preferably raw or organic) cows or goats milk & a high quality whipped cream. quality is everything friends!!
