luckily there are things like this pie to keep those childhood cravings at bay.
it tastes just like the real thing!-in a pie form of course.
remember to use the best quality, organic ingredients and enjoy slowly with love, gratitude and no guilt!
crust:
1 c activated raw almonds
1 c raw coconut shreds
5 T raw cacao powder
12 pitted dates
1/2 t sea salt
1 t vanilla extract
-add everything to a food processor and process until crumb texture & sticks together between your fingers.
-evenly press into the bottom & up sides of a parchment lined pie dish & set in freezer.
caramel layer:
10 soaked pitted dates
3 T raw almond butter
3 t coconut oil
2 t vanilla extract
-add ingredients to a high speed blender (I love to use my blendtec twister jar for this!) and process until smooth and creamy.
-smooth into the bottom of crust, sprinkle with a small handful of coarsely chopped raw wild jungle peanuts and set back in freezer.
peanut butter mousse:
cream from 1 can (chilled) full-fat coconut milk
1/2 c melted raw coconut butter
3/4 c raw wild jungle peanut butter
3 T pure grade b maple syrup
1/2 t sea salt
-blend until very smooth & creamy. smooth over caramel layer & set in freezer until firm.
-slice into pieces & sprinkle with chopped almonds or peanuts & drizzle with raw cacao:
1/4 c chopped cacao paste
2 t raw honey
2 t coconut oil
-melt in a double broiler gently on low & whisk until it is the right consistency.
-drizzle each slice, eat. love.
(best quality peanut butter!)
