raw vegan & gluten free nutterbutters!!
lets just get right to the recipe cause....yeah nutterbutters.
cookie:
1 c gf sprouted oat flour
8 pitted soft dates
2 T coconut oil
2 T yacon syrup, raw honey or coconut nectar
1/4 t sea salt
-add all ingredients to a food processor or blender and process until very smooth.
-lay out parchment paper and sprinkle some coconut flour to avoid sticking. rub a rolling pin with coconut flour and roll out dough to 1/4" thick. use a circular cookie cutter to cut out cookies. keep rolling out batter until you've used all of it, transfer cut cookies to a parchment lined plate & set in freezer while making filling.
filling:
2 T raw coconut butter
2 T raw wild jungle peanut butter
2 T yacon syrup or liquid sweetener of choice
1 t vanilla extract
-blend until smooth. once cookies are firm, spread some filling onto one half and sandwich them. set back in freezer while making drizzle.
chocolate drizzle:
2 T coconut oil
2 T raw cacao powder
1 t yacon syrup or liquid sweetener of choice
-blend until smooth. remove frozen cookies from freezer & drizzle with chocolate sauce. set back in freezer for 15 minutes & serve!
-keep leftover cookies in freezer and share with people because that is the nice thing to do.
THEY ARE GOOD.
