salads are lovely, aren't they? there are so many different salads out there..you could make a different one every day for your whole life! this one i made with fresh, wild caught salmon, boiled baby red, white and purple potatoes, local asparagus and fresh greens. it is protein, fat & carbohydrate balanced, yet still wonderfully light.
the dressing is one you can keep thick and massage into the leaves, or water down for drizzling. be sure to choose a good quality sun-dried tomato brand with no extra additives (or bonus: make your own!)
for the salad, toss:
fresh wild caught salmon, cooked & seasoned
baby potatoes, steamed 15 minutes until soft & sliced
asparagus cut into 1" chunks & steamed
mixed baby greens
green onions to top
s + p if needed
add dressing on the side:
1/2 c organic (nothing added) sun-dried tomatoes
1/4 c evoo (cold pressed, organic extra virgin olive oil. hint: choose a dark bottle)
juice from 3 lemons
1 T acv (apple cider vinegar-i like the bragg brand with the mother in it!)
1 handful fresh parsley
1 T fresh dill
zest from 1 organic orange
1 garlic clove
s + p to taste
1/4 c water as needed to thin
-add all ingredients to a blender and blend until smooth.(it kinda looks gross-but i promise it is yum!!!)
