raw vegan sea salted pistachio-fudge pie

ahhh this pie hit the spot. why do pistachios+cacao+sea salt go SO GOOD together?!
i made this guy 100% sugar, grain, and gluten free, and added all the good fats to keep me going for hours. this treat is richhhh, so just a small slice is very satisfying.

crust:
11/2 c raw shelled pistachios
1/4 t cardamom
pinch of sea salt
4 large pitted dates
-add all ingredients to a food processor and process until it sticks together well. press evenly into the bottom and up sides of a springform pan and set in freezer.

fudge:
1 c cacao powder
1/2 c coconut oil
1/2 ripe avocado
2 T coconut milk
stevia to taste (i like mine darker.. so i just add a tiny bit. add as much as you need to make it sweet, or throw in a little raw honey!)
-add all ingredients to a blender and blend until smooth and creamy. spread evenly into the bottom of crust & finish with a sprinkle of flaked sea salt, crushed pistachios + cacao nibs. set in fridge or freezer until firm, then slice and serve!

raw superfood brownies with a secret ingredient!

KALE. what? yes. in these brownies is a whole huge bunch of fresh, organic kale. and they are delicious! you can easily throw these together in 5-10 minutes and have a delicious snack to go to in a pinch. or something to fill that chocolate craving in a healthy way! i used stevia to sweeten these, keeping them low in sugar, but high in good fats and satisfying protein + fiber!

ingredients:
2 c de-stemmed kale, packed
1/4 t sea salt
2 c raw walnuts
1 c raw pecans
2 t vanilla bean powder
1/4 c chia gel (1/4 c chia seeds soaked in 1 c water overnight)
stevia to taste
2/3 c raw carob powder
water

-add kale and salt to your food processor and process until well-chopped. add all other ingredients and process well, adding water, 1 t at a time until it all comes together well, without being too sticky.
-line a 9x13 glass dish with parchment paper and evenly press brownies into the bottom. sprinkle the top with coconut flakes and set in freezer for about an hour, then remove, slice, and serve! stores best in freezer (let thaw for 5 minutes before eating).

note: i chopped one of these brownies up and topped my peppermint green smoothie...it was amazing.

full-moon-fix: raw choco-hemp fudge // raw tahini-caramel fudge

FUDGE. yes fudge. it is so good. i try to keep simple, small bite sized treats like this in my freezer so when i am looking for a quick sweet fix, there it is! and a much better choice than oreos ya know?
most women, if living in harmony with nature and its cycles and seasons, should experience their own cycle with the mother moon. during the full moon, we should be at the peak of our monthly cycle. well, the full moon is tomorrow, so i understand you will all be needing some high vibrational, antioxidant rich CHOCOLATE (: get it, girl.

these are my 2 favorite fudge recipes. you can try one, or just make both. because 2 is better than 1.

they are healthy, made with pure ingredients and completely raw, vegan and "paleo" plus they are both way easy to whip up. so indulge in your full-moon-fix here, rather than the bakery. ladies (gents too!) your body will thank you!

the first match made in heaven: chocolate & hemp seeds

0g sugar // July 6th-milk chocolate chia freezer fudge (to help those post-holiday blues)

yes, chia fudge. genius. thick, fudgy, creamy, with a tiny bit of crunch from the raw cacao nibs. mmmm...

at least for me, it seems like the Fourth of July comes and goes so quickly. it's such a fun holiday and it is always sad to see it pass by, never being able to savor it quite as long as you'd like.

often, holidays like Independence Day come a long with a lot of good food, friends, family, fun & sugar! which leaves us craving sweets for the next several days (or weeks).

so, I made up this fudge to replace your leftover pies, cookies, ice cream etc...sweetened only with stevia leaves it at zero grams of sugar and full of healthy fats & protein to curb those cravings even more. just a slice here & there will satisfy that sweet tooth in a pinch! plus, the maca-cacao duo will give you a great dose of energy!

here's what you do:

vigorously whisk together 1/4 c chia seeds & 1/2 c homemade unsweetened nut mylk & set in fridge for up to an hour until it becomes super thick & dense.

then, throw the following in your blender:

chia pudding
1/2 c raw organic cacao nibs
1/4 c raw organic cacao powder
1/4 c pure raw organic almond butter
1/4 c pure organic coconut oil
3 T raw maca powder
3 T unflavored collagen protein (or whole food protein of your choice)
organic stevia to taste

blend up until smooth & creamy & use a rubber spatula to transfer it to a lined square glass baking dish. set in freezer until firm, cut into squares, feel the upgrade!!!

*tip* I added 3 squares to my morning smoothie & made it extra creamy and delightful!
