use this delicious sauce on the pasta, or use it as a dip for veggies or raw crackers! it is delicious.
I use cashews a lot because they easily mimic other not-so-healthy foods that are a staple in most American diets. they are so diverse! here are some nutrient facts on the wonderful nut:
- They are packed with vitamins minerals and antioxidants.
- They contain vitamins E, K, B6
- They have a low GI
- They have a lower fat content than most nuts and the fat they have is heart protective.
- They can help to reduce high triglyceride levels.
- Frequent nut consumption is associated with lower weight gain.
so cut the guilty pleasures and use cashews to make something healthy and delicious!
sauce:
1 c raw cashews soaked overnight & drained
1/2 c water
11/2 T lemon juice
1 t organic white miso
1 garlic clove
1/2 c packed fresh basil leaves
1/4 t pink salt
1/4 t freshly ground pepper
-blend cashews, water, lemon juice, miso & garlic in a high speed blender until very smooth. then pulse in fresh basil, s & p.
-toss sauce with 3-4 spiraled cucumber noodles (or your favorite noodle), 2 c halved local cherry tomatoes & 1/2 c raw pine nuts. top with freshly ground black pepper & serve!
