let's face it, we all have comfort foods... for me, ice cream is the comfort food of all comfort foods. it calms my soul!
but really.. I love that I can enjoy such a nutrient-packed, healthy version of this favorite food any time I want! (in moderation, of course).
the base for this, and most of my favorite ice cream recipes is fresh young thai coconut meat and raw cashews. lightly sweetened with coconut nectar, flavored with fresh mint leaves and colored with spirulina + all swirled together with some superfood-packed dark chocolate... heaven!
enjoy it's loveliness right now:
chocolate swirl:
2 T pure maple syrup
1 T raw cacao powder
1 T melted cacao butter
-add all ingredients in a bowl & whisk together well. set in fridge.
ice cream:
1/2 c fresh young thai coconut meat (option to use dried & soaked coconut, or coconut butter in place!)
1/2 c raw cashews, soaked overnight
1/4 c coconut nectar or coconut palm sugar
1/4 c coconut water
1 T coconut oil
2 T tightly packed mint leaves + 10-20 drops of peppermint essential oil depending on how minty you like it
1/4 t spirulina powder (optional for pretty color)
-add everything to a high speed blender & blend until suuuuper smooth. if you have an ice cream maker, freeze ice cream using that, pouring in the chocolate swirl the last few minutes of churning. if not, pour into a dish & stir every 30 minutes until frozen, adding the chocolate swirl the last 30 minutes.
