flax milk



been loving this flax milk for all things lately. especially with granola and in my morning “latte” to make it extra creamy. it also packs some healthy fiber and fats making it ideal morning fuel!


it’s so simple and fast to make. + you can easily adjust the flavor to your liking!

to make:
add 1/3 c ground organic flaxseed (or 1/4 c whole flax) to a blender with 3 c filtered water & a pinch of sea salt. blend on high for 15-20 seconds (no more).
set in fridge for 10 minutes and your milk will separate into 3 layers. after 10 minutes, scoop off the top layer and either throw away or use in baked goods/granola (a perfect egg replacement!). add spices/sweetener as desired and blend another 30 seconds. i love to add vanilla bean powder, organic stevia or a few dates, and cinnamon + nutmeg!

-store in fridge 2-5 days and shake before using.

*note: as you’ll see in the second picture, more flax fibers will settle at the bottom as it sits. i like to keep these in because 1: i like the extra fiber & 2: i’m too lazy to strain it! but you can take an extra step and strain through a nut milk bag if desired.

this milk is seriously soooo creamy and delicious. i can’t believe i’m just discovering it!

creamy turmeric latte heaven

1.5 c brewed dandelion + nettle tea
1 T turmeric
pinch of black pepper
1/8 t ginger
1/8 t cardamom
1/8 t cinnamon + more to top
2 T vanilla collagen creamer
2 T coconut butter
1 t vanilla bean ghee
2 t mesquite powder
1 t gelatinized maca
stevia if needed - to taste


-blend until frothy and smooth.

lion's mane mulberry mylk


a sweet shroomy treat to sip on while you work to boost your brain power!

10 oz filtered water
2 T mulberries
2 T coconut butter
1 t gelatinized maca powder
1 t lions mane mushroom powder
1/2 t he shou wu
pinch of sea salt, cardamom, & vanilla bean powder
-blend on high until very smooth. serve warm or chilled.

sprouted coco-sun milk (no strain) + added pearl & he shou wu for SKIN MAGIC


2 minutes and you have the tastiest milk:

1 c sprouted sunflower seeds
1/4 c coconut butter
4 c filtered water
vanilla stevia to taste (optional)
pinch of sea salt
-blend on high a few minutes until extra creamy, then gently blend in:
1 t pearl (optional-for skin beauty!)
1 t he shou wu (optional for longevity & hair health)


-taste for sweetness. stores in fridge up to 5 days.

pretty pink adaptogenic beauty smoothie



6 oz water or homemade nut milk
1/2 c fresh or frozen strawberries
1 small cooked beet
4 T tocos
1-2 scoops lavender collagen beauty water or vanilla collagen creamer
1/2 t each: ashwagandha, reishi, he sho wu, pearl powder (all optional)
pinch of cardamom & sea salt
ice
-blend on high.

raw strawberries & cream grainless granola





i swear i will never get tired of granola...i love inventing new ways to make it. i probably have a hundred different recipes for granola on here all of which are delicious! ranging from nut-free to grain-free to sugar-free...this recipe happens to include all three! if you have never tried sprouted watermelon seeds...you definitely should. they taste amazing. i buy them organic, raw & sprouted online with a little sea salt added. they are high in protein and so easily digested! the perfect addition to this "granola" or trail mix snack.
threw together this recipe in 5 minutes...literally. no planning required!

how to:
2 c large coconut flakes
1 c raw sprouted watermelon seeds
1 c freeze dried strawberries

-mix together in a large bowl

blend:
1/4 c cashew butter
1/4 c coconut butter
2 T coconut oil
1 t vanilla
10-20 drops liquid stevia
1/2 t sea salt

-pour over dry ingredients and mix well with a wooden spoon until everything is evenly coated. set in freezer for an hour and serve with your favorite yogurt/homemade nut milk, or take as a snack on the go! *keeps best in fridge or freezer*

***note: I've made so many variations of this recipe...adding chocolate protein and subbing freeze dried strawberries with freeze dried raspberries is also amazingly tasty. add any spices you like or switch out the watermelon seeds with sunflower seeds or raw cashews. oh, and subbing the cashew butter with raw macadamia nut butter makes for a heavenly breakfast experience (:

tigernut milk


tigernuts are a traditional food of spain and nigeria. they are rich in minerals and vitamins C & E, a great source of prebiotics, and have a flavor similar to chestnuts-nutty & sweet!

this recipe is easy to make and easily one of my favorite milks to date!


ingredients:

1 c tigernuts, soaked overnight
4 c filtered water
2 t cinnamon
pinch of sea salt
optional stevia to taste

-drain tigernuts and add to a blender with all other ingredients. blend for two minutes until very smooth and creamy. strain through a nut milk bag and chill before serving.

HOW and WHY to soak your nuts, seeds, grains, legumes, etc..

ever wonder what i mean when i say to use "activated almonds" or "sprouted oats" etc...? most nuts, seeds, grains and legumes are covered in natural chemicals - enzyme inhibitors and toxins - that protect them while growing, both from sprouting prematurity and also from predators. once harvested, these nutritional inhibitors are indigestible by the human body and must be broken down before consumption.
the very simple process of soaking releases these chemicals, helping your body to absorb your food's essential minerals and nutrients. this may help those who think they might have a grain or nut allergy, be able to digest and assimilate those foods just fine! additionally, by soaking nuts (especially for use in raw desserts) the texture, flavor and taste is much more ideal and appealing.

to soak:
place nuts in a glass bowl or jar and fill with filtered or purified water (option to add a splash of lemon juice or apple cider vinegar to help activation), making sure to cover the nuts completely. cover the jar or bowl and place in a cool spot to soak overnight (at least 8 hours). drain, discard the soaking water and rinse nuts, grains, etc.. with fresh water. if you aren't going to use them right away, to store either dehydrate back out in a dehydrator at 115F until crispy (do this with grains, nuts or legumes that you are planning on grinding into flour), OR store in an airtight container in the freezer.

now you are ready to use your activated & digestible foods! (:

pistachio lemon-poppy seed granola - to warm your fall soul!


just another heaven-sent granola recipe...
this granola is naturally gluten-free, but if you need to eat gluten-free make sure to buy certified gluten-free oats. if you don’t have certain ingredients on hand you could swap in any sprouted nuts or seeds you like.



batch yields about 4 c
Ingredients:
3 cups sprouted gluten-free oats
1/2 cup raw pistachios
1/2 cup sprouted buckwheat groats
3 tablespoons chia seeds
2 tablespoons poppy seeds
1 small mashed banana
1/2 cup lakanto sugar (or coconut palm sugar!)
1/2 cup coconut oil, melted
zest from 3 lemons
juice from 3 lemons

-preheat your oven to 325F. line a baking sheet with parchment paper.
-combine oats, pistachios, buckwheat, chia & poppy seeds in a bowl & set aside. 
-in a blender, combine the banana mash, lakanto sugar, coconut oil, and lemon zest and juice. blend until smooth, add into the dry ingredients & combine together well.
-spread the mixture out evenly amongst the two baking sheets and bake for 15 minutes. remove and stir, then bake an additional 10 minutes until golden brown. 
-cool completely. pop it back, eat it with your fav mylk or yogurt, or put it in small baggies and send it to school with your kids! makes a perfect snack on the go.

my favorite: lavender hibiscus granola with goji berries and cacao chunks + wyoming ranch



first of all...^cacao paste heaven^




if i had to choose my favorite granola on the planet, this would be it. why? 1. it contains chocolate. 2. it's healthy. 3. there are flowers in it. 4. it is crunchy. 5. it is satisfying. 6. it makes my house smell like heaven while its baking and for hours after...should i keep going? i think you get it. it is so lovely and can be thrown together + baked in minutes. 




if you are a granola lover (which i am just going to assume you all are), you must try this STAT. 

fun fact: 


i lived off of celery, coconut butter, fresh fruit and this granola for 3 days while at our ranch in wyoming during the galland family reunion, where everyone else was eating nothing but spaghetti and oreos...ha! i was prepared and ate healthy the whole time. when i pack easy foods like this that i love, the piles of junk food on the counter really aren't appealing at all!

(sorta praying our girls get devs model-esque legs pictured above^^) here is a little love from the trip, filled with hammock chillin', razor riding, pond dipping, long forest walks, pretty mountains, a million kids, a half a million bug bites and a whole lot of love.

i get foot rubs anywhere and everywhere-even in the air. just like, the teeniest bonus to being married to the best man on earth.


matthew and truman played hard and then crashed hard on the plane ride home. coolest kids.

ingredients:

1 c chopped activated walnuts
1 c coconut flakes
2 c activated buckwheat groats (soaked overnight then dehydrated at 115F=the best crispy coco puff texture!)
1/2 c raw hemp seeds
1/2 c activated sunflower seeds
1/4 c chia seeds
2 T dried lavender
3 T dried hibiscus
2 T coconut sugar
1/4 t high quality sea salt


*buy organic everything guys, it's better for life.
-mix all ingredients together in a large bowl. line a baking sheet with parchment paper and preheat oven to 350F. then mix in:

1/2 c raw local honey or brown rice syrup
1/4 c melted coconut oil

-mix well and spread evenly onto parchment. bake for 12 minutes, stir, then bake again for 12-15 minutes until golden. (alternatively you can dehydrate to keep it raw, just set your dehydrator at 115F & check every couple hours for doneness). cool completely, then mix in 1/4 c goji berries & 1/4-1/2 c chopped cacao paste (or a high quality, naturally sweetened chocolate chip).

-enjoy with your favorite yogurt or homemade nut mylk, topped with fresh berries + bananas. devour.

-note: if there is any ingredient you do not have, this recipe is very flexible. omit chia seeds & add more sunflower seeds, or make it nut free and add more coconut or buckwheat. add poppy seeds or almonds, pecans, sprouted rolled oats, etc...use what you have & get creative!

easiest//yummiest rawnola on earth.


it never rains here in Newport coast. sometimes it gets a little misty, if we're lucky. but today I woke up to a full-on rain. puddles! it made for a very gloomy & dark morning, which I love every once in a while; it's beautiful! and the best part is, it'll probably be sunny and hot by noon. (: 


but until then, I'm going to skip early morning yoga & let it be a lazy granola morning for me.

this rawnola is lovely & SO easy. no dehydrator, no waiting, no wishing. just a few ingredients and you've got yourself some healthy cereal lovin. 


you can adjust it how you'd like. if you'd rather have it grain free than nut free, sub the sprouted oats for sprouted raw almonds, pecans, cashews, or my personal fav, a mixture of sunflower & hemp seeds with added flax, chia or sesame. sub dates for raisins if desired, or dehydrated banana! basically this is the same as making one of my raw pie crusts-just a tad less moisture. yum! (I want to eat the crust plain half the time anyway...) so here you go! 


in a food processor add:

organic sprouted, gluten free rolled oats
(it's nice to know I don't have to take the time to sprout my own foods sometimes, and that there are lovely companies like this that do it for you! when you're cooking for eleven, you don't always have the time to do everything you'd like. so, you just do what you can!)




organic shredded coconut 
organic soft pitted dates
1-2 t organic coconut oil 
fresh ground nutmeg (optional, I love the taste of fresh nutmeg in a morning cereal! add the spices you enjoy)
high quality sea salt 

there is also the option here to make it a sugar free cereal by adding more coconut oil to make it come together, omitting the dates and sweetening slightly with some organic stevia. 

-I don't put measurements on here because usually when I make this up, I just add more of what I need as it processes. so depending on how much you want to make, add your ingredients, and add more dates/coconut oil until it is still crumbly, but will somewhat stick together. 

-I also stirred in some larger coconut flakes this time, you can add what you want to the mixture, dried fruit, banana chips, nuts, get creative! or, keep it simple. of course, stirring in some raw cacao nibs never made anything worse. 


-add to a bowl with toppings of choice: fresh berries, figs, bananas, stone fruit etc... eat with my homemade nut mylk or your favorite yogurt (or plain-makes a great trail mix! gah. the options really are endless)

-transfer leftovers to a jar and I like to store it in the freezer-it'll keep longer & I like to enjoy it cold!

grain-free donuts // blueberry rose-geranium glaze



cooking with essential oils is nothing new, I know. but if you've never tried the perfect pair of rose + geranium, mmmm you've never done it right! the floral-y sweetness of this glaze over a light, yet dense coconut vanilla donut.. makes my tummy sing pretty summer songs. 


these guys are fail proof & quite easy to whip together. I made them with coconut flour, which can turn out interesting sometimes, but worked perfectly here. 


nothing but whole food ingredients in these babies. makes them perfect for anyone!


makes 6 donuts

ingredients:

4 large organic cage free eggs
1/4 c melted organic ghee or coconut oil
1/4 c coconut milk
1/4 c raw honey 
1 t acv (braggs apple cider vinegar)
1 t vanilla extract
1/2 c organic coconut flour
1/2 t baking soda
1/4 t high quality sea salt

-preheat oven to 350F & generously grease a donut pan with ghee. 

-in a bowl add the eggs and butter and beat on high with an electric whisk. add in the milk, honey, acv & vanilla and beat again until fluffy. with the beaters going, slowly pour in a little flour at a time until all combined. add in baking soda & sea salt & beat on high for 30 seconds. 

-using a spoon or a plastic bag with the corner cut off, carefully fill each mould evenly. place in the oven and bake for 15-18 minutes until edges are golden. flip over the pan onto a cooling rack and let donuts cool completely. 

glaze:

-bring 1/2 c honey to a boil in a small saucepan. simmer for 8 minutes & remove from heat. add in 1 T coconut butter, 1 T almond butter, 1-2 T organic blueberry juice & 3 drops each of rose & geranium oil. whisk well & cool. 

-dunk each donut in glaze and place back on wire rack. add toppings of choice and enjoy a healthy (but not necessarily healthy-tasting) breakfast with some ice cold homemade nut mylk


*store in fridge up to a week.
